Chestnut Toast Recipe

Cooking time - 15 minutes

Prep time - 8 minute

Serving - 2 people

Ingredients: 

200g chestnut mushrooms

½ of a red onion, finely diced

3 spring onions, finely chopped

1 handful fresh thyme, picked

1 tbsp balsamic vinegar

1 tbsp butter

2 tbsp olive oil

2- 4 slices sour dough toast

2 cloves confit garlic (optional)

Salt and Black pepper

 

Method:

  1. Harvest your chestnut mushrooms from your Mushroom box, twist and lift gently
  2. Clean and half a red onion, dice finely into small cubes then cut spring onion into small pieces- set aside
  3. Pick thyme off of stalks, chop into fine pieces 4. Separate your cluster of mushrooms into individual or small groups, remove the base of the stalk (keep in a zip lock bag in your freezer to make stocks) Half any large mushrooms.
  4. Add the olive oil to the pan, plus both your red onion and spring onion- cook for 3-4 minutes
  5. Season with salt and paper- finely chop then add your fresh thyme and finally the star of the show, the chestnut mushrooms
