A Decadent King Oyster Mushroom Risotto

Mushroom risotto Ingredients:

  • 1 tbsp olive oil
  • 1 medium onion, finely chopped

  • 2-3 cloves garlic, minced
  • 250g Arborio rice
  • 100ml dry vermouth (or dry white wine)
  • 1.2 liters boiling water
  • 1 vegetable stock cube
  • 100ml plant-based cream (like Alpro Single)
  • 4 tbsp nutritional yeast (like Engevita)
  • Salt and pepper to taste
  • Small bunch of flat-leaf parsley, roughly chopped
  • 250g King Oyster mushrooms (from your Mushroom Box grow kit!), sliced into 4-5 pieces
  • 2 tsp olive oil

Instructions:

  1. Sauté the aromatics: Heat 1 tbsp of olive oil in a large saucepan or sauté pan over medium-high heat. Add the onion and celery and cook until softened (about 15-20 minutes), stirring regularly. Add the sliced white mushrooms, season with salt and pepper, and cook for 5-10 minutes, until lightly browned. Add the garlic and cook for another 2 minutes.
  2. Toast the rice: Add the Arborio rice to the saucepan and stir for 1 minute to coat. Pour in the vermouth (or white wine) and cook for another minute.
  3. Cook the risotto: Gradually add the boiling water, one ladleful at a time, stirring constantly and allowing each ladleful to be absorbed before adding the next. Continue until the rice is creamy and al dente (about 20-25 minutes).
  4. Sauté the King Oysters: While the risotto cooks, heat 2 tsp of olive oil in a separate frying pan over medium-high heat. Add the sliced King Oyster mushrooms, season with salt and pepper, and sauté until golden brown and tender, turning occasionally (about 15 minutes).
  5. Finish and serve: Once the risotto is cooked, remove it from the heat and stir in the plant-based cream and nutritional yeast. Season to taste with salt and pepper. Top with the sautéed King Oyster mushrooms and a sprinkle of fresh parsley. Serve immediately.
