Lion's Mane Mushroom Steaks with Garlic Butter

Ingredients:

  • 1 large Lion's Mane mushroom (available at some local markets or health food stores or grown with a mushroom box.)
  • 30 ml olive oil (use a South African olive oil like Willow Creek or Morgenster)
  • 2 cloves garlic, minced
  • 5 ml dried thyme (or fresh if available)
  • Salt and pepper to taste
  • 30 g salted butter (or vegan butter alternative)

Instructions:

  1. Prepare the Mushroom:
    • Clean the mushroom gently with a damp cloth. If it needs washing, quickly rinse it and let it dry.
    • Slice the mushroom into 3.8 cm thick "steaks" by cutting down the middle and then slicing each half.
  2. Sear the Mushrooms:
    • Heat a cast-iron skillet over medium heat (about 180°C). Add 15 ml of olive oil.
    • Place a mushroom steak in the pan and press down with a smaller skillet or a weighted surface for about 3-4 minutes on each side, until golden brown.
  3. Make the Garlic Butter:
    • In a small saucepan, melt 15 g of butter over low heat.
    • Add the minced garlic and dried thyme. Let it simmer for a minute until fragrant.
  4. Finish with Garlic Butter:
    • Place the seared mushroom steaks back in the skillet with the garlic butter mixture.
    • Baste the mushrooms with the butter, ensuring they're well coated.
    • Season with salt and pepper to taste.
  5. Serve:
    • Serve the mushroom steaks hot, garnished with fresh herbs if desired.

Optional Variations:

  • Boerewors Marinade: Marinate the mushrooms in a mixture of olive oil, lemon juice, and a pinch of paprika before cooking for a South African twist.
  • Braai Style: Grill the mushrooms over a braai for a smoky flavor, brushing with olive oil and seasoning with salt, pepper, and thyme.
