Lion's Mane Mushroom Burger Recipe

Ingredients:

For the burger patties:

  • 2 large Lion's Mane mushrooms (around 200g)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ½ cup breadcrumbs (use gluten-free if preferred)
  • 1 egg (or a flax egg for a vegan option: 1 tbsp ground flaxseed + 3 tbsp water)
  • 1 tbsp soy sauce or tamari (for a gluten-free option)
  • 1 tbsp olive oil (for cooking)
  • ½ tsp smoked paprika
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • 1 tbsp fresh parsley or cilantro, chopped (optional)

For assembly:

  • Burger buns (whole wheat, gluten-free, or your choice)
  • Lettuce leaves
  • Sliced tomatoes
  • Pickles
  • Vegan mayo, mustard, or your favorite burger sauce
  • Cheese slices (optional, for a vegan option use plant-based cheese)

Instructions:

  1. Prepare the mushrooms:

    • Tear or chop the Lion's Mane mushrooms into bite-sized pieces. Heat a pan over medium heat, and add olive oil. Sauté the mushrooms until golden brown and crispy on the edges, about 5–7 minutes. Set aside to cool slightly.
  2. Make the patty mixture:

    • In a bowl, combine the cooked mushrooms, onions, garlic, breadcrumbs, egg (or flax egg), soy sauce, paprika, cumin, salt, pepper, and parsley. Mix everything together until well combined. If the mixture feels too wet, add a little more breadcrumbs.
  3. Form the patties:

    • Divide the mixture into 2–4 patties, depending on your desired size. Shape them into round, even patties.
  4. Cook the patties:

    • Heat a non-stick skillet or grill over medium heat and lightly grease with oil. Cook the patties for about 4–5 minutes on each side, or until they are golden and firm.
  5. Assemble the burgers:

    • Toast your burger buns and spread your favorite sauces on the bottom bun. Add lettuce, a patty, tomato slices, pickles, and cheese (if using). Top with the other half of the bun.
  6. Serve and enjoy:
