Most people who discover Pink Oyster mushrooms (Pleurotus djamor) have the same reaction: they can't believe something this vivid is actually edible. What Makes Pink Oysters Special

Pink Oysters are a tropical species, which means they thrive in warmer conditions than most other mushrooms. While Blue Oysters prefer 15–20°C, Pink Oysters are happiest between 20–28°C — making them ideal for South African kitchens, especially in summer.

They fruit in dense, fan-shaped clusters called "bouquets," with dozens of individual caps emerging from a single attachment point. A healthy Pink Oyster flush is genuinely spectacular — a full, cascading cluster of vivid pink that will make anyone who sees it stop and ask what it is.

Flavour-wise, Pink Oysters have a more robust, slightly seafood-like flavour compared to their Blue cousins. They cook beautifully — the caps crisp up in a hot pan and take on a wonderful umami depth that makes them ideal as a meat substitute or as a centrepiece ingredient.

Step-by-Step: Your First Pink Oyster Flush

Day 1: Setting Up

Remove the grow box from its packaging. You'll notice the substrate bag is already fully colonised — it looks white and firm, threaded through with mycelium. Cut an X-shape or a rectangular window in the front of the bag — approximately 8–10cm wide. This is where your mushrooms will emerge. Place the box in a spot with indirect light and good airflow.

Days 1–5: Misting

Mist the exposed substrate surface twice a day — morning and evening — with clean, room-temperature water. Within 24–48 hours of first misting, you should see tiny pink pin-heads beginning to form at the cut opening. Once you see pins, increase your misting to three times a day if possible.

Days 4–7: Harvest

Pink Oysters develop quickly. By day 4 or 5, your pins will have grown into recognizable mushroom clusters. Harvest when the caps are fully formed but before the edges start to curl upward or the colour begins to significantly fade. To harvest, grip the entire cluster at its base and twist gently while pulling. The whole cluster should come away cleanly.

Getting a Second Flush

After your first harvest, allow the substrate to rest for 5–7 days. Remove any remaining mushroom bases from the cut area. Resume twice-daily misting and within a week to ten days, a second flush should begin to develop. Common Problems and How to Fix Them

Mushrooms developing long stems and small caps: This is a CO2 problem. Your growing environment needs more fresh air exchange. Move the box to a better-ventilated location, or fan the opening briefly each time you mist.

Colour fading too quickly: Pink Oysters naturally fade as they age and as temperatures rise. If you're seeing rapid colour loss, your environment may be too warm (above 28°C) or too dry. Increase misting frequency and consider moving the box somewhere cooler.

Mould appearing on substrate: Small amounts of green mould around the edges can occur if the bag becomes too wet or if ventilation is poor. Remove any visibly moulded substrate carefully and improve airflow.

Cooking Your Pink Oysters

Pink Oysters lose their colour when cooked — they turn a golden-brown, similar to other oyster varieties. For the best flavour, cook them hot and fast: a screaming-hot cast iron pan with a small amount of oil or butter. Add the mushrooms in a single layer, let them sear without moving for 2–3 minutes until golden and slightly crispy, then season with salt and pepper.
