Follow This Simple Process:

  1. Sauté Mushrooms and Onions: In a large pot or oven, melt the butter over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes. Remove the mushrooms from the pot and set aside.
  2. Soften Onions and Garlic: In the same pot, add more butter if needed, then sauté the chopped onions until they are translucent and slightly caramelized, about 8-10 minutes. Add the minced garlic and cook for another minute until fragrant.

  5. Simmer and Season: Let the soup simmer for about 10-15 minutes or until it has slightly thickened. Season with salt, pepper, and dried thyme.
  6. Add Coconut Cream: Stir in the coconut cream (or heavy cream) and let it heat through without boiling. This will give the soup a creamy texture.
  7. Blend for Smoothness (Optional): If you prefer a smoother soup, you can blend a portion of it in a blender or with an immersion blender.
  8. Serve: Ladle the soup into bowls and garnish with fresh parsley or thyme. Serve with crusty bread or croutons for a satisfying meal.
