🍄 The Ultimate Mushroom Sauce
Featuring: Oyster Mushrooms (&/or Lion's mane, chestnut, portobello, or shiitake)
WHY THIS RECIPE WORKS:
This recipe brings out the natural umami of your mushrooms by letting them cook low and slow before adding any oil. The result? Golden, crispy edges and a deeply satisfying, creamy mushroom sauce — perfect on pasta, toast, roast veg, or even a juicy steak.

INGREDIENTS:
2 cups fresh mushrooms (Lion’s Mane, oyster, or any mixed mushrooms)

Salt (just a pinch)
1 tbsp olive oil or butter
1 clove garlic, minced
½ cup cream (or coconut cream for dairy-free)
Fresh thyme or parsley (optional for garnish)
HOW TO MAKE IT:
1. Start Dry
Tear or slice your fresh mushrooms.
Place them dry into a pan over medium heat (no oil yet!).
Let them cook for about 5 minutes, stirring occasionally — this helps evaporate the water and intensify flavor.

2. Add Oil & Garlic
Once the mushrooms look dry and slightly browned, add your olive oil or butter and minced garlic.
Sauté until golden and the garlic smells amazing (about 3 minutes).

3. Make It Creamy
Pour in the cream, reduce the heat slightly, and simmer for 2–3 minutes until thick and silky. Add salt to taste and herbs if you like.

SERVING IDEAS:
Spoon over sourdough toast
