What does it taste like?

How to cook them: Because of their tender caps and thinner stems, Blue Oysters cook quickly and crisp up beautifully. Tear them into clusters or individual caps and pan-fry in a hot skillet with butter (or olive oil), garlic, and a pinch of salt. They develop lovely crispy edges while keeping a tender, velvety center. They are exceptional tossed into creamy pastas, layered onto gourmet wood-fired pizzas, stirred into rich risottos, or simply piled high on seared sourdough toast.
