Our freshly harvested Shimeji Mushrooms (Hypsizygus tessellatus), also known as Beech mushrooms, are grown right here in South Africa — this is as fresh as it gets. Harvested to order and available for delivery.
What does it taste like?
Delicate, nutty, and subtly sweet. While bitter when raw, cooking completely transforms Shimeji into a savory delight with a mild, pleasant umami flavor and a uniquely firm, crunchy texture that holds up beautifully in any dish. The brown variety offers a slightly more robust, earthy note, while the white variety is exceptionally clean and mild.
How to cook them: Trim off the base of the cluster to release the individual stems. Sauté them whole in a hot pan with butter or sesame oil, minced garlic, and a splash of soy sauce. Because of their slender shape, they cook quickly, developing a beautiful golden color while retaining their signature crisp bite. They are exceptional tossed into vibrant stir-fries, simmered in hot pots and ramen, folded into creamy risottos, or pickled as a gourmet topping.
